I've lost two pounds in two days. Granted, my workouts both Monday and Tuesday were HARD. Between weights and interval training, I'm a bit knackered today but it was worth it and other than the stiff muscles, I feel fantastic.
The food consumption has been between 1400-1600 calories both days and I've given up bananas as my afternoon snack in exchange for carrots (because I literally choke down bananas and can't stand the taste).
One recipe that I'll share with you all was from Monday night... I made prosciutto wrapped scallops with a sun dried tomato paste. Incredible. All I did was take a few sun dried tomatoes, some basil and grind it into a paste (food processor). Then I smothered the scallops with it and wrapped them all in thinly sliced prosciutto. Bake on 350 for 15-20 mins and they protein/flavour filled pieces of heaven. I also made a chickpea/blackbean couscous on the side (which I had all of 1/4 a cup due to it being high in calories) and a huge salad.
So as you can see, things are going well so far this week but are about to hit a major snag. I'm visting my family in the US this weekend. I'll try to workout a couple times, I'll try to control the junk food... but jeez, I'll be on a mini vacation so I want to at least indulge in some of the food/drink (and my Mom and I... we love the red vino). So i've lost two pounds in two days. If I can make it to the next weigh in on Monday and carry that two pound weight loss, it will be a minor miracle.
